- a bunch of nettle gently flashed in hot h2o
- 1 1/2 tbsp chia
- 1/2 cup coconut milk (canned or fresh young thai coconut flesh and juice } blended till smooth)
- 2 tbsp nutritional yeast
- 2 tbs gamsio
- 1 tsp himalayan pink salt
- 1/4 tsp cayenne (dried)
- 3 garlic cloves (peeled)
- 1/2 a meyer lemon (skin and all)
- 2-3 tbsp olive oil
first flash your nettle; boil water and throw in your nettle, only long enough to wilt your nettle, you still want a vibrant green. use chopsticks or gloves, because nettle stings! flashing is important because you don't want a stung tongue. set aside to cool.
next throw into your vita mix the remaining ingredients, blend until smooth. then add your nettle.
voila!
of course you could substitute the nettle for basil or any other delicious herb. or leave out the nettle entirely and have an amazing "cheesy" sauce.
tastes great on quinoa, on top a baked yam and slathered all over spaghetti squash!
yummm, cheers to eating our way to health!
